Ground Fish

(Delicious and good for the whole family.)

750 g (24  oz)firm white fish fillets, cut
into strips, each 2x5 cm
1 tspn finely grated lime rind
1 egg, beaten with a dash of ground
white pepper
1 tspn salt (as desired)
2 tspn chopped fresh coriander
vegetable oil for deep frying
½ cup milk
½ cup  flour
½ cup dried breadcrumbs
Place breadcrumbs, coriander, salt, and lime rind in a small bowl and mix to combine. Dip each fillet in milk, then in flour, egg, and finally in breadcrumb mixture. Place fillets on a plate lined with plastic food wrap, cover and chill for at least 30 minutes. Heat oil in a large, deep sauce pan and cook fillets in batches for 2-3 minutes or until golden. Using a slotted spoon remove fillets and drain on absorbent kitchen paper.
Serve hot garnished with parsley and lemon wedges.
