Dosa is a batter and idli is a boiled cake prepared from overnight fermented paste made by grinding a mixture of split black gram (daal) and rice.

1. See if you can taste the difference.
Many of your favorite foods probably come in reduced sugar and no sugar versions. For some foods, you'd be surprised at how hard it is to tell the difference---ice cream for example. For others, sugar is a glaring omission. Try the reduced sugar version and if it tastes just as good or almost as good, opt for that version from now on.

2. Cut back gradually.
Cold turkey equals failure. Instead, if you usually have 2 sugary snacks a day, cut down to one; then one every other day etc, until you're at a level you can live with. If you normally have 2 teaspoons of sugar on your grapefruit, cut back to one. Don't go beyond your level of taste tolerance or you won't be able to keep it up for long. For some people, one teaspoon of sugar on an entire grapefruit would be, well, grim.

3. Only eat sugary food when you really want it.
Actually, this is good advice for breaking any bad habit, whether it's eating sugary snacks or watching too many 80s reruns on TV. Be mindful. Do you really want that snack or are you just bored? This combination of many different aspects to the burger has regionalized the burger in a way that allows different regions and different cultures to make their own take on the classic burger using ingredients local to their region.
The prevalence of burgers in the United States is attributed to the increased ability to produce beef through the abundant use of livestock. By the late 19th century an increasing amount of land was devoted to raising cattle and harvesting their meat which led to the United States being the largest producer and consumer of beef. Beef was already an inexpensive resource and was available to the middle-class which led to it's rising popularity. This allowed the burger to reach it's peak popularity with the majority of the American people.
The modern burger was developed in The United States but by the end of World War II, around the middle of the 20th Century it began to spread to other countries along with the fast food industry. The main cause for this globalization of fast food was the success of large restaurant chains like McDonald's. Their desire to expand their business and increase net profit drove them to expand into other countries and offer their services. Making Your Own Stock

First off, why make your own stock? Well, to begin with, it's fun! On a more practical note though, a stock you make yourself is much more flavorful than one of those canned or bottled stocks you can buy at the grocery store and will also be completely free of additives and preservatives. Just pick up a can or bottle of stock next time you go to the grocery store and note all the extra stuff besides "stock" that is put into these products. The compressed stock cubes are even worse, there's hardly any stock in them at all, it's mostly salt (real stock should not have any salt in it) and corn starch! Making your own stock gives you control over one of the most important base ingredient in a range of dishes such as soups, sauces, stews, all kinds of oven dishes and much more.
A quick note on the difference between a stock and a broth; the two are very similar but the main difference is that stock is a clear liquid that has nothing in it whereas a broth, while consisting mostly of the same liquid as stock, can include additional ingredients such as vegetables and meat, making it in fact a type of clear soup.
The stocks I am about to talk about are the ones used in the French cuisine. There are two main types of stocks, white stock and brown stock. The main difference between the two is that the bones (or vegetables in vegetable stock) in white stock are not fried (browned) before adding water whereas the bones in a brown stock are fried and caramelized before adding water. It does not matter what kind of bones you use, you can have beef white stock and chicken brown stock.
The basic ingredients in every stock is a combination of three special aromatic vegetables, namely carrots, celery and onions. This vegetable combination is so good that it even has a special name in many languages such as mirepoix (French), refogado (Portuguese), sofrito (Spanish), suppengrün (German) and "holy trinity" (Creole cuisine). It is a classic combination that just can't go wrong. In fact, you can use this combination in many other dishes such as pot roasts, stews and braised oven dishes.
The second very important ingredient in stock is a combination of herbs, called bouquet garni (garnished bouquet). Although there is no generic recipe for what is included in a bouquet garni it is usually some combination of sprigs of parsley, thyme, rosemary, sage and bay leaf tied together into a bundle with a bit of string. Sometimes garlic and peppercorns are included as well but then it's not possible to tie all the ingredients together so a little pouch of cheesecloth or coffee filter is used instead. These herbs are always strained out at the end so it's not strictly necessary to tie them together or put them into a cheesecloth pouch.
The third important ingredient in stock is bones. I put them last because bones are not used in vegetable stock. When making vegetable stock, you substitute bones for some more aromatic vegetables such as peppers, leeks, radishes and so on. You can use any bones you can lay your hands on but the cooking time of the stock you are preparing will vary significantly based on the bones you are using. This is because different types of bones need different cooking times to extract their full flavor potential. Here's the cooking times for commonly used bone types:
Fish Bones: 30 - 45 minutes, any longer and you'll ruin the taste! Chicken Bones: 3 - 4 hours Lamb Bones: 4 hours Pork Bones: 4 hours Beef and Veal bones: 7 - 8 hours
You can also use meat in your stock, either already cooked (leftover) or fresh. This is a great way to get every last bit out of whole chicken once it's served its purpose on the dinner table. Fresh meat will produce a superior taste though and meat rich in connective tissue such as chuck, shin or shoulder (beef or veal), or chicken thighs and so on is recommended.
Here's a basic chicken white stock recipe:
Stock: 900 gr/2 lb Chicken Bones 1 Piece Onion 2 Pieces Carrots 2 Pieces Celery 1 Piece Leek 4 dl/4 qt Water
Herb bundle: 1 Piece Garlic Clove (Smashed) 4 Pieces Parsley Stems 1 Tea Spoon Peppercorns (Black) 1 Piece Thyme (Fresh Sprig) 1 Piece Bay Leaf
Cut the vegetables into rather large chunks (they will be cooking for a long time). Then put all the ingredients into a large pot (you can put the herbs into a cheesecloth sachet if you want). Turn on high heat and let it come to a boil, then reduce the heat to low and let simmer gently for 3 - 4 hours (because we are using chicken bones, cooking times depend on the type of bones you use). If any foam forms, remove it. If you leave it, it might incorporate itself back into the stock, resulting in murky stock. Once the stock is done cooking, strain it through a fine meshed strainer and then pour it into a container and refrigerate. Once cool, skim the hardened fat off the top. You can freeze stock for a very long time. It's a good idea to create a little stockpile of frozen stock for when you need it.
The recipe for brown stock is almost the same except you fry the bones and brown them first. Don't move them around much at all when frying, just let them sit for a few minutes on each side. Then add the vegetables and fry with the bones for a little bit. Next add the water and follow white stock recipe.

Chafing dishes have been around for millennia and are a sort of indoor barbecue set in the form of charcoal-burning braziers and, possibly, the forerunner to the fondue set. The sixteenth century baroque painter, Diego Velazquez, portrayed a woman preparing a meal of eggs in a chafing dish and Louis XV's kitchens used them to keep the dainty dishes for the epicurean courtiers piping hot. By the seventeenth century this form of cookware was being documented in household inventories in America.
Velasquez's chafing dish appears to be earthenware, but silver chafing dishes used as plate-warmers were mentioned during the reign of Queen Anne, at the end of the seventeenth century. It was George II, around the middle of the eighteenth century, who had the foresight to put handles on the chafing dishes, which must have made life so much easier for the cooks and scullery maids of the time! The Victoria and Albert Museum in London, exhibits a gleaming copper chafing dish with brass fittings dating to circa 1895. Copper is an ideal metal because it is hard-wearing and conducts heat evenly while the brass handles remain cool enough to lift and move around.
In the 1950s the hostess trolley was designed. This was essentially a large chafing dish (or series of dishes) on wheels in a wooden surround to imitate a piece of furniture. It was thought to liberate women from the kitchen, enabling her to prepare food in advance and keep it warm, while she entertained the guests along with her husband. These fell out of fashion relatively quickly as the penchant for formal dining declined along with tastes for food left standing on a hot plate for several hours! With the demise in popularity of the hostess trolley came the revival of the chafing dish, more versatile, space-saving, portable and attractive than the great wooden tiered hearse for plates.

1 can cut green beans, drained
1 can wax beans, drained
1 can kidney beans, drained and rinsed

1/2 cup vinegar
3 tbsp water
1/2 cup sugar*

Pour the dressing mix over the bean mixture, tossing with a large spoon to coat beans well. Cover and place in the refrigerator to chill until serving time. Before serving, give beans a good stir to combine any dressing that has settled to the bottom.
*You can make this a DIABETIC friendly dish by substituting an equal amount of Splenda granulated for the sugar. Taste will be the same.

ITALIAN-FLAVORED POTATO SALAD

This is a great light potato salad that does not use mayonnaise.
5 to 6 medium new red potatoes, cooked, cut into bite-size pieces
2 cloves of garlic, minced
1/2 cup coarsely chopped red pepper
3 to 4 plum Roma tomatoes, quartered
1/3 cup olive oil
3 to 4 fresh basil leaves, chopped
1 jar (5 3/4-oz) pimento stuffed olives, drained and sliced
1 tsp dried oregano
1 tsp salt
1/4 tsp freshly ground black pepper
Lettuce leaves to line bowl, optional
In a large bowl combine the potatoes, garlic, red pepper, tomatoes, olive oil, basil leaves, olives, oregano, salt, and pepper; toss to coat well. Cover bowl and refrigerate until serving time.
Serve the salad in a large lettuce-lined bowl, if desired. Or serve on individual lettuce-lined plates, if desired.

Do you want to cook simply and still ensure that your kitchen is only producing healthy meals? Then you are going to love the idea that I'm going to share with you today. I just received my first produce box! This produce box is filled with healthy, fresh ingredients that practically guarantee that I will be cooking light recipes all week.

Why A Produce Box?
Growing your own fresh vegetables can be fun and rewarding. I think it’s a big pain in the neck. The second best thing is going to your local farmers market to buy fresh fruits and vegetables that are grown in your community by your local farmer. However, I’ve discovered the next best thing to THAT! It’s a produce box that is delivered to my front door each week.

My Produce Box is an excellent example of Community Supported Agriculture (CSA) that is now becoming very popular, and may now be available in your area.

Community Supported Agriculture (CSA)
CSA is a way for the farmer to cooperate directly with his customers, as we all agree to purchase whatever is freshest and best from his farm this week. Each week’s box will contain different items based on the local conditions, not the national conditions and price futures; you work directly with the farm and farmer.

This is of great benefit to you, the farmer, your community, the earth, farm workers, and your local economy. Certainly there are many other benefits too, but the main reason I enjoy supporting my local farmers is that they supply the best TASTING ingredients. It’s something that many people aren’t aware of as they continually dull their palates with international flavorless food.

Even lettuce has a distinct flavor. People snicker when I say that, but it’s true. When you consider that all agriculture products take on the characteristics of the sun, soil, and water of where they’re grown you can believe that lettuces can be as different as wines.

Cook Simply
Besides having the best ingredients with the most nutritional quality and flavor, I love my weekly produce box because of the serendipity of opening the box. I don’t know what surprises I’ll find, but I’m always up to the challenge of being ready to cook whatever is in the box. I don’t try to over-complicate the basic fruits and vegetables within. I want to retain as much flavor and nutrition as possible, and this means I cook simply and easily using the best ingredients.

It’s NOT More Expensive
The most common misconception about your local farmers market or CSA is that fresh ingredients are more expensive. Yes, they’re more expensive calorie-for-calorie than a microwavable meal with a mile-long ingredient list. But we’re not comparing garbage to apples.

If your local farmer just needs to pick the ingredient and deliver it to the farmers market or to your door in the case of a produce box, it can’t possibly be as expensive as internationally shipped produce. My farmer doesn’t have the cost of spraying his produce with wax. He doesn’t absorb the cost of the airline trip. My local farmer has much more pride in his work than the corporate produce distributor.

Fresh Ingredients Cook Better
It’s a fact. A fresher item is easier to cook than one that is falsely ripe. Tomatoes that are picked at a green color and then gassed to make them red for the long cross-country trip to your market are harder to cook than your local farm-fresh variety that was allowed to ripen on the vine.

If you want to cook simply and easily, have the freshest ingredients with the most nutritional value, and support your local community, explore the options of having fresh produce delivered to your door from your local farmer. You’ll enjoy food more.

How To Prepare Herbal Teas

Sometimes you may determine that the best way for you to take your herbs is by making tea.
Herbal teas come in a variety of forms due to the various plants and plant parts that are a part of our formulas. This post can serve as a quick reference guide for you to refresh your memory on how to prepare your herbal teas and get the most out of them.
Infusions vs. Decoctions
There are two main ways that herbal teas can be prepared: infusions and decoctions.
Infusions call for leaves, flowers, delicate stems, finely shredded barks and roots, aromatic plant parts, and crushed seeds.
Decoctions call for the heartier, tougher, plant parts such as roots, bark, berries, seeds, and stems.
Avoid using a microwave.
Avoid using aluminum cookware and choose stainless steel or other non-reactive cookware.
Medicinal infusions
Medicinal infusions are used for some therapeutic use such as promoting sleep, balancing blood sugar, relieving a cold or flu, etc.
By the cup:
Steep one tablespoon of herbs in hot water for 15 to 30 minutes. Strain and enjoy.
By the quart:
Steep four to six tablespoons of herbs in one quart of hot water for 15-60 minutes. Strain, and drink through the day.
Nutritive infusions
Nutritive infusions are for use when using nutritive herbs, ie, herbs that are very high in and being used for their nutritive compounds.
By the quart:
Steep four to six tablespoons of herbs (you can use up to one ounce of nutritive herbs) in one quart of hot water for a minimum of 60 minutes. This can steep overnight.
Strain, and then drink throughout the day.
Cold infusion
The cold infusion technique is for use with herbs that are high in certain compounds that are negatively affected by heat.
By the cup:
Steep one tablespoon of herbs in cool water for 60 minutes or as long as overnight. Strain.
By the quart:
Steep four to six tablespoons of herbs in one quart of cool water for 60 minutes or as long as overnight. Strain, and drink throughout the day.
Decoction, for therapeutic use
Decoctions are used to extract herbal constituents from tough plant parts.
By the cup:
Simmer one tablespoon of herbs in 12 oz. of water for 15 to 30 minutes over low heat in a non-aluminum pot. Keep covered but be sure to keep an eye on water levels. Strain and drink.
By the quart:
Steep four to six tablespoons of herbs in one quart of water for 15 to 30 minutes over low heat in a non-aluminum pot. Keep covered, but be sure to keep an eye on water levels. Strain and drink throughout the day.
Strong Decoction, for therapeutic use
Strong decoctions are used when a higher concentration of herbal constituents is desired for extraction from the using the toughest of plant parts.
Simmer one ounce of herbs in 16 oz. of water for 15 to 30 minutes over low heat in a non-aluminum pot. Keep covered. Strain and drink.

That way you know exactly the ingredients that are contained within a disk or recipe. Eating out at restaurants is still possible but planning and research it typically needed although the market is growing for gluten-free food and so if you research your local area you maybe surprised of local restaurants offering menus free of gluten.
It came be an unhappy time when people are first diagnosed or come to realize that they have gluten intolerance. They can focus on the fact they may have to forego their favorite foods or dishes. It is true that following a gluten free diet is not easy but it does not mean you have to miss out of the types foods that gluten eating people enjoy, things like desserts which typically are associated with Gluten can be made with the flour ingredient substituted for a gluten free version.
The trickiest part in gluten free foods comes when you have to pick grains and flours. Since bread, pasta, and other products produced out of wheat, barley, rye and oats contain gluten, you need to be extra careful in picking grains and flours. However items made from the following grains and flours are considered gluten free foods: brown rice flour, corn flour, flaxseed, rice, rice flour, soy flour, corn meal, buckwheat, cottonseed, almond flour etc.
