Gluten is the protein compounds found in wheat, barley, rye and other such grains. Those who suffer from celiac disease have a condition where the small intestine cannot tolerate gluten and the gluten starts to injure the lining of the small intestine. Having Celiac disease is one of the main reasons for a diet free of gluten although it has become more popular in recent years for the perceived health benefits of following this type of diet.
Gluten is commonly used as food additive, it is used for many types of food we eat day to day and so it does take some planning and research to follow the diet. Ideally if you are looking for a diet free of gluten, it is best that you buy your own ingredients and cook at home. That way you know exactly the ingredients that are contained within a disk or recipe. Eating out at restaurants is still possible but planning and research it typically needed although the market is growing for gluten-free food and so if you research your local area you maybe surprised of local restaurants offering menus free of gluten.
It came be an unhappy time when people are first diagnosed or come to realize that they have gluten intolerance. They can focus on the fact they may have to forego their favorite foods or dishes. It is true that following a gluten free diet is not easy but it does not mean you have to miss out of the types foods that gluten eating people enjoy, things like desserts which typically are associated with Gluten can be made with the flour ingredient substituted for a gluten free version.
The trickiest part in gluten free foods comes when you have to pick grains and flours. Since bread, pasta, and other products produced out of wheat, barley, rye and oats contain gluten, you need to be extra careful in picking grains and flours. There are literally thousands of recipes available for dishes and lots of them for desserts like chocolate cake or brownies.
